I was thinking of what to make yesterday that’d be quick and delicious for the weekend. My husband doesn’t like brownies very much, so I thought he might like it’s cousin, the blondie. And man was I right! He loves these! Joey wasn’t complaining either when he got to taste what he and I made up together (he mostly sat and ate chocolate chips).
Ingredients:
- 1 ½ sticks butter, softened
- 1 c packed dark brown sugar
- ¼ c granulated sugar
- 2 eggs
- 1/2 tsp salt
- 1 tsp baking soda
- 2 c flour
- 1/4 c mayo
- 5 tbs whole milk
- 1 (11 oz) bag of butterscotch chips
Caramel glaze:
- 1 c packed light brown sugar
- 1 stick of butter
- ¼ whole milk
- 1 tsp vanilla
Directions:
Pre-heat oven to 350°.
Using a standing mixer or hand mixer, cream butter and sugars together. Add eggs, salt, baking soda, mayo and flour (slowly). Add milk. Stir in butterscotch chips.
Pour batter into greased 9×13 pan and spread dough evenly. Bake 25-30 minutes or until browning on edges.
Let cool 20-30 minutes before pouring caramel on.
For the caramel: In a saucepan bring butter, brown sugar and milk to a boil. Stir constantly for 1 minute. Remove from heat and add vanilla. Stir for 2 minutes. Pour onto blondies and spread with a spatula.
