Mac ‘n’ Cheese Bites with Leftovers

Joey’s hit the wonderful toddler phase of picky eating. Since I’m Italian, I’m having a hard time dealing with that. Instead of wasting the food he barely eats I’ve been trying to reuse the leftovers for a future meal. These mac ‘n cheese bites were a hit with him and he ate ALL 4! So for you moms out there with a picky toddler and you’re tired of throwing away food- give these a try! They’re perfect for their little hands to pick up and snack on. (He liked to dip his in ketchup!) Plus, they’re quick and easy to make!


Ingredients: (Makes about 4 pieces)

  • ½ c mac ‘n’ cheese leftovers
  • 1tbs shredded cheese
  • 1 ½ – 2 tsp milk
  • ¼ c plain bread crumbs
  • 3 tbs vegetable oil


  1. Mix mac, cheese, milk and 1½ tbs breadcrumbs. Form them into little discs. Coat the discs with remaining breadcrumbs.
  2. Heat oil in a pan and put the mac ‘n’ cheese discs in and brown on each side (about 2-3 minutes each side).
  3. Place on paper towel to remove excess oil and serve after they’ve cooled a few minutes. Goes great with ranch or plain ketchup!
