Roasted Acorn Squash

Squash has long shelf life (if properly stored) and is a super healthy and easy vegetable to cook that is jam packed with vitamins (C, beta-carotene, omega-3 &6).  This recipe takes just minutes and tastes delicious! It does call for a specific seasoning, which most people don’t have. But you can use sea salt or another flavored seasoning salt.

For those of you who REALLY love to cook, I suggest you check out the Borsari website and order a flavor. My husband grew up near the family and it’s our favorite seasoning on just about any dish. My kitchen is always fully stocked! If you love a good bloody mary you should try their Bloody Mary Mix, too! It’s the best mix I’ve ever had! Hope you like it!

Ingredients:

  • 1 acorn squash
  • 2 tbls. EVOO
  • 1 tbls. maple syrup
  • pepper
  • Coffee Borsari

Directions:

  1. Pre-heat oven to 375°.
  2. Cut ends off of squash and slice in half lengthwise. Scoop out the middle/seeds and discard. Cut halves into 1/2 inch slices.
  3. Lay slices on greased baking sheet.
  4. Mix EVOO and maple syrup and brush over squash. Sprinkle pepper and Borsari on top.
  5. Put in oven for 35-40 minutes.
