Not only is Fried Green Tomatoes my favorite Kathy Bates movie, it also happens to be my favorite side dish (or entrée if you make enough!). It has taken me quite a few attempts to get this recipe just where I want it and I think last night I finally got it!
Ingredients: (serves 2)
- 1-1/2 cups flour
- 1 tbls cayenne pepper
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 2 eggs
- 2-1/2 cups Panko bread crumbs
- 1 tbls red pepper flakes
- 2 green tomatoes
- 1 cup oil (vegetable, olive, canola- doesn’t matter)
Cut tomato into 1/2″ slices.
Combine flour, cayenne, salt, pepper and garlic powder on plate.
Whisk eggs in a medium bowl.
Combine Panko and red pepper flakes on separate plate.
Heat oil in large, deep skillet on medium heat.
Dip tomato slices one at a time (covering both sides evenly) into flour mix first, then the eggs, then lastly the Panko. Place about 4 slices at a time into skillet. Cook about 4 minutes each side, or until brown.
Place on a baking sheet and in oven at 300° to keep warm until all have been fried and ready to serve. Enjoy!
Easy dipping sauce recipe:
- 1 cup mayo
- 2 garlic cloves (pressed)
- 1 tbls horseradish
- pinch of salt and pepper
- 1 tbls minced onion
Combine all ingredients in small bowl and serve on side.
