When we first started cooking together, we thought every meal had to be this big event. And although this meal tastes like you put a lot of work into it, it’s relatively painless thanks to any cook’s best friend: the crock pot. This meal is so quick and easy to prepare, you can have it cooking in minutes. The balsamic glaze is perfect when paired with some creamy mashed cauliflower, pureed celery root or just plain mashed potatoes! This is our go-to meal when we know we’ll be running around all day and would rather spend more time cuddled on the couch than cooking in the kitchen.
Ingredients:
- 3 skinless chicken breasts
- 2-1/2 tbls minced onion
- 1 tsp rosemary, dried
- 1 tsp oregano, dried
- 1-1/2 tsp basil, dried
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cups balsamic vinegar
- 2 tbls olive oil
- 4 garlic cloves, minced
- 1 sweet white onion, cut into chunks
- mozzarella pearls, about 10-15
- 8 cherry tomatoes ,whole (optional)
Drizzle 2 tbls olive oil in bottom of crock pot. Mix in minced garlic cloves, onion and tomatoes.
Combine dry herbs and spices on plate or in bowl. Cover chicken (both sides) with herb mix. Put on top of onions and tomatoes in crock pot. Pour balsamic vinegar over chicken. Cook on high for 3-4 hours. Top with mozzarella pearls before serving. Enjoy!
