When you cook a lamb, you don’t just toss the leftovers. No matter how little there is left, there’s always enough to make sammies. You just add some cheese and veggies and badda bing badda boom- you’re all set.
Ingredients: (serves 2)
- 6 slices of swiss cheese (This sandwich is REALLY cheesy, you can adjust the amount if you like)
- 1 banana pepper, sliced
- 1 bell pepper, (we used orange) sliced
- 1 small white onion, sliced
- 2 garlic cloves, minced
- leftover lamb, sliced
- salt/pepper
- olive oil
- 2 ciabatta buns
- Dick’s Homemade Beet Horseradish
Preheat over to 350°
Sautée in one large pan: peppers, onion, garlic, olive oil, salt and pepper.
Cut the ciabatta buns in half and spread about 1/2 tbls. Dick’s Homemade Beet Horseradish on bottom side of bun.(More if you like it spicier!)
Distribute lamb evenly on bottom buns and top with pepper/onion mix and 1 slice of cheese each. Put 2 pieces of cheese on each top bun. Put the sammies on a baking sheet and in the oven for about 5 minutes, or until cheese melts. Enjoy!
